Chicken + Waffles

Our spin on a classic Southern breakfast—crispy, warm waffles topped with finger-lickin’-good oven-fried chicken and a spicy-sweet syrup.

This is a comfort meal you can enjoy for breakfast, lunch or dinner. It’s savory, spicy, and 100% delicious.

Ingredients

WAFFLES
• 4 frozen waffles

CHICKEN
• 1 lb. chicken tenderloins, skinless
• 1 c. pickle juice, or low-fat buttermilk
• 1 large egg
• 2 Tbsp. light mayonnaise, (we like Duke’s)
• 1 c. breadcrumbs
• 1 tsp. garlic powder
• 1 tsp. onion powder
• 1 tsp. paprika
• ¾ tsp. kosher salt
• ½ tsp. ground black pepper

Directions

  1. FOR THE CHICKEN: Place chicken in a plastic bag or bowl with pickle juice (or buttermilk) and marinate in the fridge for at least 30 minutes to overnight.

  2. When ready to cook the chicken, preheat oven to 450˚. Liberally coat a baking sheet with non-stick oil spray, or line with aluminum foil, and set aside.

    *If you have a wire baking rack, we recommend using one on top on the baking sheet for crispier chicken.

  3. In a shallow bowl, add the egg and mayo and mix until well combined. In a second shallow bowl, add the breadcrumbs and seasonings, and mix until well combined. One at a time, lift each piece of chicken out of the pickle juice and shake off excess liquid.  Submerge into the egg-mayo.  Then, place into the breadcrumbs bowl and pat all over to fully coat. Place on the prepared baking sheet.

  4. Mist the breaded chicken tops with oil spray, and bake about 15 minutes, or until chicken reaches an internal temp of 165˚. The breading should be a crispy brown.

  5. While the chicken is cooking, make the waffles according to package directions.

  6. Remove chicken from oven, place on top of waffles, and drizzle with Reaper Maple Syrup, or regular syrup for the kiddos.
